Minestrone Soup

A classic Italian soup that can be regarded as a complete meal, an ideal lunch time soup especially on a cold day.

Ingredients
1 can dried Cannelini
2 canned chopped tomatoes
5 strips of bacon, cut into squares
10 cups of chicken stock
1 Onion, chopped
1 Celery, chopped
1 Carrot, chopped
1 Leeks, chopped
4 cloves garlic
Olive oil
1 potato, diced
1 zucchini, diced
Salt
Pepper
Parmesan for garnish
Pesto (for garnish, optional)
Spaghetti , cooked as per pack instructions




Soak the beans overnight in cold water. Heat up a large pan and add the bacon, chopped onions and garlic sauté until  the onions are translucent. At this point add the celery, carrots, leeks and sweat these for 2-3 minutes. Now add the diced potatoes and zucchini and continue to sauté At the same time cook the spaghetti according to the pack instructions.

Drained the beans and add these and the canned tomatoes into the pan. Pour in the chicken stock and bring the soup to a boil. Simmer for about 30 minutes until the beans are cooked . Add the spaghetti and ensure everything is cooked through.

Serve in bowls with a a sprinkle of parmesan, add salt and pepper to taste.
