Mexican Chicken Rice

Ingredients

Rice
Chicken breast fillets
Kidney beans
Sweetcorn
Peas
Chilli peppers
2 Eggs
Peppers
Red onion
Olive oil

Optional -for marinading chicken (or your own choices)
salt and pepper
chilli powder (to taste)
garlic (fresh or granulated)
soy sauce
thyme
basil
paprika
You can use any other mixed spices etc to give it extra flavour.

Boil the rice (usually takes about 15-20 mins) . Slice the chicken breasts into small cubes and add the herbs to marinade  Fry the chicken on medium heat until brown. Meanwhile, take the eggs and make a scrambled egg in a separate frying pan, adding a splash of milk to make it extra fluffy. Once ready, put it aside. Once the chicken is brown, add all the vegetables and pan fry until they are nice and soft about 5 minutes. Once the rice is cooked and the vegetables are soft, add rice to the frying pan, along with the scrambled egg and stir. Add a small amount of chilli powder to taste.
